CREAMY CUCUMBER SALAD RECIPE

I grew up eating a Creamy Cucumber Salad Recipe similar to today’s salad.

It reminds me of a old-fashioned creamy cucumber salad that my grandma made.

It has always been a favorite of mine. It is an easy summer salad.

I love how light it is, yet healthy and filling. It is the perfect salad as the weather starts to get warmer.

If you have fresh garden cucumbers or farmers market cucumbers you need to use them in this salad!

The version we made growing up had tomatoes in it, like in this Cucumber Tomato Yogurt Salad, which you can easily add to this salad if you want.

This delicious cucumber salad is a great side dish for your warm weather get-togethers, lunches throughout the week or a pairing to your favorite main dishes.

Cucumbers have always been a favorite vegetable of mine.

I love them in salads, on a veggie tray, as part of a pita sandwich or a rice bowl.

There is something about those crunchy, crispy cucumber slices mixed with a creamy, cool dressing and fresh herbs. It creates such a refreshing cucumber salad.

This makes the perfect easy side dish to any meal!

WHAT INGREDIENTS DO I NEED FOR A CUCUMBER SALAD?

FRESH VEGETABLES: I used crisp, fresh cucumbers and red onion but you could use white onions or yellow onions. Try bell pepper, carrots, radishes and zucchini.

You can use regular cucumbers or english cucumbers. The english cucumbers have a thinner skin if you prefer that.

CREAMY DRESSING: The creamy dressing is the star of today’s recipe aside from the cucumbers. I created the dressing using plain greek yogurt, white vinegar, honey, garlic clove {or garlic powder} and sugar.

I love the protein that the Greek yogurt adds along with the tangy flavor. You can also use regular yogurt, a combination of sour cream and yogurt or even mayo.

I have also used red wine vinegar in place of the white vinegar or agave in place of the honey.

FRESH HERBS:I am a sucker for fresh herbs. In the summer I grow a lot of them, from mint, to basil, to parsley to dill. When you add fresh herbs to a recipe I believe it takes it to the next level.

This cucumber salad uses fresh dill, parsley and chives. You can feel free to use all of those, one of those or even add additional herbs like mint.

If you don’t have fresh herbs you can use dried dill, dried parsley and dried chives.

HOW DO I MAKE THIS CREAMY CUCUMBER SALAD RECIPE?

PREPARE THE CUCUMBERS: Thinly slice your cucumber and put in a large mixing bowl. Sprinkle the 2 teaspoon kosher salt on the cucumber, stir and let sit for 30 minutes. This process helps sweat the excess water out of the cucumbers.

MIX TOGETHER THE DRESSING: In a large bowl combine the dressing ingredients in a mason jar or salad dressing container and stir together. Taste and add salt and pepper to taste.

DRY THE CUCUMBERS: After the 30 minutes stir the sliced cucumbers and drain the liquid out of the bowl. Use a paper towel to pat the cucumbers dry. Add the cucumbers back into the mixing bowl.

MIX SALAD INGREDIENTS: Add the red onion and the creamy dressing and stir well.

Add the fresh parsley, dill, green onion and chives. Taste and add salt and black pepper.

Refrigerate for 1 to 2 hours in an airtight container or serve immediately if necessary.

Store in an airtight container for up to 4 days.

WHAT SHOULD I SERVE THIS CREAMY CUCUMBER SALAD RECIPE WITH?

I love serving this cucumber salad with seafood. Some that I really like are Air Fryer Cod, Easy Pan Fried Fish, Lemon Garlic Shrimp Pasta, Black Sea Bass Recipe and this Baked Cod with Lemon.

Chicken pairs nicely with this creamy cucumber salad. A few favorites are these Easy Baked Chicken Tenders, Air Fryer Chicken Tenders, Easy Chicken Sliders, Ranch Chicken Thighs and Greek Marinated Chicken.

Soup is also a great main dish to serve with a cucumber salad. I like this Lebanese Lentil Soup, Moroccan Carrot Red Lentil Soup, Chicken Lentil Soup, Lemon Lentil Soup or this Copycat Gnocchi Soup.

Ingredients

FOR THE SALAD

  • 2 long English cucumbers, thinly sliced {peels left on}
  • 1/2 cup red onion, thinly sliced
  • 2 teaspoons kosher salt, divided
  • 2 Tablespoons fresh parsley, chopped
  • 3 Tablespoons fresh dill, chopped
  • 2 green onions, green and white parts thinly chopped
  • 2 teaspoons fresh chives, chopped {optional}

FOR THE DRESSING

  • 3/4 cup plain nonfat Greek yogurt
  • 1 tablespoon white distilled vinegar
  • 1 1/2 teaspoons honey
  • 1 garlic clove, minced
  • 1 teaspoon sugar
  • salt & pepper to taste

Instructions

Notes

You can store this salad in the fridge in an airtight container for up to 5 days.

Feel free to add any fresh vegetables that you wish. I especially like tomatoes and radishes but keep in mind tomatoes won't hold up well in the fridge if you have leftovers.
